Ube Crinkle Cookies
oooo baby! Ube seems to be the flavor of the moment in this household! Ever since experiencing Soft Swerve's Ube soft serve ice cream back in NYC, I've been craving this flavor non stop. And since I took my mom there, she's been craving it too. For those who don't know, ube is a purple yam that is widely used in Philipino cooking. I personally have only seen it used in sweet applications, but I have heard that there are savory dishes as well. Either way it's flavor is sweet and creamy, very reminiscent of taro. So after finding out that I can buy ube extract from Amazon, my ube game is going strong. Expect to find ube recipes on the regular now people! Because this creamy, tropical flavor is truly addictive. I can't even tell you how excited my entire family was to find ube ice cream at the new H Mart in town. It's now a nightly ritual to have a scoop of ube ice cream after dinner- and I'm not feeling guilty about it. After all ube is a vegetable, and vegetables are healthy right? Totally! So as the second recipe on my blog to use ube (the first were these seriously delicious ube coconut donuts!!) I'm making these Ube Crinkle Cookies!
