Campfire Snack Cake
Ok, how many of you guys are campers!? Like big outdoors, adventure is out there, pitching a tent, kind of campers?!! Yay! summer is your season! As for me… not so much….I’m not a big camper… actually I’ve only gone camping once in my life and girls, it’s not for me. Bugs, dirt, no air conditioning!? nah….But I do enjoy all the ideas of camping! Sitting out under the stars, breathing in the fresh air, and cooking ‘round a campfire. So when summer rolls around, I’m always in the mood for s’mores… and whats the best part of a s’more!? Toasted Marshmallows! Which incidentally is the easiest way to decorate a cake! Win win people! You gotta try this Campfire Snack Cake!
So if you read my blog, or know me at all, I’m big on chocolate cake. It’s probably the one thing I make the most! But sometimes, you just want a little bitty chocolate cake, because making a big ol’ 13X9” cake is crazy for just one person! So I made this cake smaller (8X8 pan) which makes it look a lot more reasonable to finish! Because lets be real, I hate wasting a perfectly good cake!
This cake is super moist, chocolatey and topped with a gooey, super simple toasted marshmallow top! What are we waiting for!? Lets make this!
Start by placing the butter, water, cocoa powder, espresso powder and salt in a sauce pan. Bring these ingredients up to a boil, then pour into the bowl of a stand mixer. Add in the rest of the ingredients (flour, sugar, eggs, baking powder, buttermilk and vanilla) Mix until smooth. Scrape down the sides as needed to ensure a well combined batter. It will be somewhat liquid.
Pour the batter into your prepared 8X8” pan and bake at 350F for 30 minutes. Allow to cool for 10 minutes before proceeding to top it. While it cools, cut 18 large marshmallow in half. Place these halves, cut side down across the top of the cake. Place the cake under the broiler for approximately 2-3 minutes. But watch it!! Don’t walk away! Once it starts browning (and it happens fast) you’ll want to keep an eye on it to prevent it from burning… or catching fire… which I may or may not knows something about…
Once evenly brown (you may want to turn the pan around to ensure even browning ) take the cake out and serve. I love laying the marshmallows out in rows because it allows you to determine the size of your slice by how many marshmallows you want! 2, 4, 6!?

Campfire Snack Cake
Ingredients
1/2 c salted butter (1 stick)
3 tbsp cocoa powder
1/2 c water
1 /2 tsp espresso powder
1 c all-purpose flour
1 c sugar
1/4 c buttermilk
1 large egg
1 tsp vanilla
3/4 tsp baking powder
1/2 tsp salt
18 large Marshmallows, cut in half
Method
Preheat oven to 350F. Spray a 8X8” pan with cooking spray then line with parchment, creating a 2 inch over hang and spray again.
In a small saucepan, add butter, cocoa powder,espresso powder and water. Bring to a boil, then carefully pour the mixture into the large bowl of a stand mixer.
Add in the rest of the ingredients (Flour-salt) Mix until well combined, scraping down the sides when needed.
Pour the batter in the prepared pan and bake for 30 minutes or until an inserted toothpick comes out clean.
Allow the cake to cool slightly, then top with halved marshmallows. Place the topped cake in the broiler for 2-3 minutes or until the tops are golden brown. Cool slightly then cut into squares and serve!
